January is the month to reset and repair after a frenetic end to the year. Despite often dark, damp appearances in the gardens, fresh shoots spear cold earth as a secret world sets to work beneath our feet. Carpets of crocuses and snowdrops are welcome harbingers of brighter days and a bumper crop of beautiful brassicas in the Market Garden inspires our chefs to conjure nourishing dishes to warm the cockles and soothe the soul.
