Estate Eateries
The fertile soil of historic Hadspen produces the finest foods for the table, from crisp vegetables to British White beef. Expertly tended by a passionate team of growers, makers, farmers, butchers and bakers working in harmony with the land and livestock, our food is an experience to be shared.
From light bites in the garden to the full three-courses at hotel restaurants, all our eateries are linked in their culinary approach: celebrating the best of farm fresh fare, lovingly prepared by talented chefs.
Please note, Newt membership is required to visit our garden eateries.
Our Cyder
Somerset is apple country, and we do enjoy a fruity tipple. From speciality cyders to signature styles, we combine traditional cidermaking with innovative techniques, and a passion for the magic and mystery that turns apples into golden nectar.
Our cyders are made from 100% apple juice, slowly cold-fermented in the cellar for months, sometimes years, for a fresh, aromatic expression exuding the full flavour of the fruit, even the weather of the growing season.
Join our Cyder Club for exclusive limited-editions and a quarterly box of signature and special estate bottlings. Discover more about the golden drop on daily tasting tours and explore the full range on our online shop.
Our Creamery
The Creamery at Castle Cary station is home to an eatery, shop and new dairy. Resurrecting a former milk factory originally built in 1912, visitors to The Station Café can watch our head cheesemaker Margaretha Van Dam and team at work with our rich, creamy buffalo milk through floor-to-ceiling windows.
Fresh cheeses and yoghurts are sold in the shop and served on the menu of hearty British classics using the best of estate produce. Stop in for coffee or something to grab-and-go for your commute or settle in for brunch, lunch or a seasonal supper. Journey into the garden for our first-class afternoon experience aboard a British Pullman carriage.
Newt membership is not required to visit The Creamery.
Our Butchery
Opened in early 2024, our glass and oak-clad Butchery at Avalon Farm allows full control over quality, provenance and traceability of all high welfare meat across the estate.
From estate venison that roams free in ancient woodland to British White beef and Dorset Down lamb, our passionate farmers grow the food for the animals on the estate and care for them their whole lives. Our expert butchers honour each animal, ensuring every part can be used to produce the highest quality meat for our restaurant plates, Farm Shops and online.
Step behind the scenes with our butchers as they impart their knowledge and experience on regular Farm-to-Knife Butchery workshops.
Our Bakery
Early each morning our bakers get to work making the day’s orders. From crackly sourdoughs to seasonal cakes, buttery pastries and sticky-sweet buns, everything we craft is made from scratch, and nothing is wasted.
Whether it’s discarded apple pulp from the cyder press to enhance the flavour of our Apple Waste Sourdough, or fruits from the garden to give a seasonal flourish to sweet treats, our aim is to capture the essence of our estate in every bake.
We don't use preservatives or cut corners in our bakery. Instead, we rely on traditional techniques and high-quality ingredients to make slow-rising delicacies to delight.
